The Foundry finds its origins at the heart of gastronomy and mixology, that have seen their golden age in the 20s, during “la Belle Epoque”.
This post-war period saw restaurants opening all over Europe with people enjoying a newly found “art de vivre”. Dishes were composed of a subtle mix of sophisticated yet local recipes.
With an ever-changing menu designed according to seasons, The Foundry sources the freshest local produce and believes that a dining experience happens when quality and expert preparation intertwine.
